Sauteed Amaranth Bhaji

Amaranth comes under non-starchy vegetable category which is helpful in low carb diet.

Ingredients
  

  • 1 no. Onion(cubed)
  • 4 no Dry Red Chilies(deseeded)
  • 2 tbsp Canola oil
  • 1 tsp Salt(adjust to taste)

Method
 

  1. Cut leaves of Amaranth bhaji and wash 3 to 4 times with tap water and put it in strainer and keep aside. Meanwhile cut onion into cubes and dry red chilies.
  2. Take a wok or non-stick pot, put it on medium high heat. Add oil, let the oil heat. Add chilies and onion and sauteed for 2 minutes.
  3. Add washed amaranth leaves to onions and chilies.
  4. Mix amaranth leaves to onions and chilies with spatula.
  5. Turn and mix amaranth leaves every 2 minutes.
  6. Let the water dry from the amaranth leaves.
  7. Once the water is dry from the amaranth leaves, the sauteed amaranth bhaji is ready.
