Wash tondali/tindora with water and cut into length wise or circles and put it in the water.
Take a pot, put it on medium heat, add oil and let it heat for 2 to 4 minutes. Add mustard seeds, let it sputter. Add cumin seeds, add onion and cook until golden brown.
Add ginger garlic paste to onion, let it cook for 1 to 2 minutes until pale in color.
Add red chili powder, turmeric powder, coriander powder and garam masala and salt, let it cook 1 minutes. Add 1 to 2 tablespoon water and let the masala cook for a 2 minutes.
Add tondali/tindora to cooked masala and mix together.
Add a cup of water and cover the pot with lid and cook for 15 to 20 minutes.
Tondali/Tindora curry is ready.
