Masala stuffed brinjal or Masala bharleli vangi is a special dish from all over India. Stuffed brinjal is a healthy, flavorful and all vegetarian dish. This vegetable is used in various cuisines. It has lots of fiber and vitamins, protein and is low in calories.

- Dry roast above garam masala ingredients. Then roast onions until golden brown and tomato as well. Let it cool down all ingredients. First, grind all the garam masala until it is fine powder and keep this powder in a container. You can use this garam masala powder as needed. Grind roasted onion and tomato into paste and use this for stuffed brinjal.
Instructions for stuffed brinjal:
- Wash brinjals.

- Make a cut into brinjals

- Take a pot, put canola oil and heat oil on medium temperature. Once oil is heated add mustard seeds, cumin seeds, let it sputter. Add finely cut onion, fry it till golden brown. Add ginger garlic paste, let it cook for 1 minute. Add red chili powder, turmeric powder, coriander powder, garam masala powder, ground onion and tomato paste, let it cook for 2 minutes. Add cut tomatoes and salt, add 1/2 cup water, let it cook for 5 minutes on low heat.

- Once masala is cooked then stuff this cooked masala in four cut brinjals.
- Put stuffed masala brinjal in a pot, add 2 cups of water and cook for 20 minute on medium heat. Check on every 5 minutes if you need water add water. The stuffed masala brinjal or bharleli vangi is ready.
